Morning Sunshine Breakfast Casserole

Ingredients

1 Wind and Willow Baked Potato Soup Mix available at Prairie Gardens

4 cups water

4 cups cubed French bread

16 oz sausage

6 eggs

1 1/2 cups cheddar cheese

Directions

Preheat oven to 350 degrees. Spray 9×13” pan with oil.

Add Baked Potato Soup Mix to water in a 2 qt. saucepan; heat to boiling, reduce heat and simmer 15-20 minutes, stirring often.

Cook sausage in a medium skillet.  Drain and Crumble.

Place bread cubes into the prepared pan. Top with the sausage.

Beat the eggs well and pour over sausage and bread.  Spoon soup over the top of other ingredients.  Cover with foil and bake 25 minutes.  Remove foil.  Top with cheddar cheese and continue to bake until cheese is melted and casserole is set in the middle, approximately 10-15 minutes.

Serves 8.


Homestyle Chicken Pot Pie

Ingredients

1 Wind & Willow Homestyle or Baked Potato Soup Mix, available at Prairie Gardens

16 oz Bag of frozen vegetables

14 oz can of diced potatoes

6 cups water

1 refrigerated pie crust

3 cups Chicken, cooked and cut into bite size pieces

Directions

Preheat oven to 350 degrees. Combine soup mix with water; bring to a boil and reduce to a simmer. Add potatoes, vegetables, and chicken. Simmer for 15 minutes stirring frequently; Pour mixture into a 9×13″ baking dish. Cover with pie crust and bake approximately 20 minutes or until crust is golden brown.  Let rest 10 minutes. Serve! 

Options:

-Use your own fresh veggies instead of frozen.  Stir in 1 cup shredded cheddar cheese just before adding mixture to baking dish.

-Instead of a 9×13″ baking dish, use 6 smaller baking dishes for individual pot pies!


Scalloped Potatoes

 

Ingredients

1 Wind & Willow Broccoli Cheddar Soup Mix, available at Prairie Gardens

8-10 medium potatoes (peeled and sliced)

1 cup grated cheese

Directions

Preheat over to 350 degrees. Grease large baking dish.

Prepare Broccoli Cheddar Soup according to directions on package. Layer potatoes in baking dish. Pour soup over potatoes. Cover with foil and bake for 50 minutes. Uncover and top with grated cheese. Return to oven for 10 minutes. Serves 6-8.

Original Spice Blend

To make cider: combine 1 carton with 1 gallon of apple cider or juice & serve hot or cold.

To spiced wine: combine 1 carton with 1.5 liters of red wine & serve hot or cold.

To make spiced tea: combine 1 carton with 1 gallon of brewed tea & serve hot or cold.

To make spiced brandy: combine 6 TBSP of Original Spice Blend per liter of Brandy & serve hot or cold.

Cinnamon Orange Blend

To make cider, tea or Juice: combine 1 carton with 1 gallon of apple cider, unsweetened tea, or fruit juice such as cranberry, apple, pineapple or apricot & serve hot or cold.

To make a Spiced Toddy: combine 6 TBSP of Cinnamon Orange Spice blend per liter of Whisky, Rum or Brandy and serve hot.

Caramel Apple Spice Blend

To make cider, tea or Juice: combine 1 carton with 1 gallon of apple cider, unsweetened tea, or fruit juice such as cranberry, apple, pineapple or apricot & serve hot or cold.

To make a Spiced Toddy: combine 6 TBSP of Caramel Apple Spice Blend per liter of Whisky, Rum or Brandy and serve hot.
